Onion and Chive Cauliflower Rice

Ingredients

  • 1/2 onion, diced
  • 2 Tbsp ghee
  • 1/2 head of cauliflower
  • 1/4 cup chives, chopped

Directions

  1. Heat a skillet over medium heat and add the onion and ghee. Cook for about 10 minutes or the onion starts to brown
  2. In a Nutribullet cup or small blender, add the cauliflower and pulse until it resembles the consistency of rice. You may need to do it in batches to make it easier.
  3. Add the cauliflower to the skillet and cook for about 20 minutes, stirring occasionally
  4. Remove from heat and add the chives. Stir the mixture to distribute
