- 1/2 onion, diced
- 2 Tbsp ghee
- 1/2 head of cauliflower
- 1/4 cup chives, chopped
- Heat a skillet over medium heat and add the onion and ghee. Cook for about 10 minutes or the onion starts to brown
- In a Nutribullet cup or small blender, add the cauliflower and pulse until it resembles the consistency of rice. You may need to do it in batches to make it easier.
- Add the cauliflower to the skillet and cook for about 20 minutes, stirring occasionally
- Remove from heat and add the chives. Stir the mixture to distribute
