Mediterranean Sushi


  • 1 Tbsp ghee or coconut oil
  • 1/2 head of cauliflower, grated or pulsed in a blender to a rice consistancy
  • 1/3 cup roasted cabbage
  • handful of mixed greens, chopped
  • 6 olives, chopped
  • 1/4 cucumber, chopped into quarters
  • 5 cherry tomatoes, halved
  • 1/4 cup sauerkraut
  • 1 tsp garlic
  • 1 Tbsp balsamic vinegar
  • 3 nori sheets


  1. Heat a skillet to medium heat melting the ghee or coconut oil
  2. Add the cauliflower rice and cook for about 10 minutes, stirring occasionally
  3. Add the cabbage and mixed greens and cook for another 10 minutes mixing until the greens are wilted
  4. Remove from heat
  5. Add the rest of the ingredients leaving the nori sheets out, and mix until evenly distributed
  6. Lay out the nori sheets side by side. Add the mixture along the short side, leaving 2 inches distance between the mixture and the edges.
  7. Roll the sheets like a burrito, you may need to wet the end so the roll sticks in place.
  8. Slice into about 4-6 pieces per roll and serve
