Fried Egg with Sauteed Fennel and Greens


  • 1 Tbsp coconut oil
  • 1/2 bulb of fennel, cut into thin slices
  • 1 teaspoon minced garlic
  • 2 egg yolks
  • handful of mixed greens
  • salt and pepper to taste


  1. Heat a large skillet over medium heat, melting the coconut oil
  2. Add the fennel and saute for about 15 minutes or until the fennel becomes soft
  3. Add the egg yolks, letting them be while they cook for a couple minutes
  4. Add the greens to the top and cover with a lid
  5. Cook for about 15 minutes, usually when the greens become wilted
  6. Remove the lid and give everything a good stir,
  7. Remove from heat and serve
