Mustard Thyme Parsnip Fries


  • 4 or 5 medium turnips, cut into match sticks
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 3 tablespoons fresh thyme, finely chopped
  • Freshly milled black pepper


  1. Preheat the oven to 400F
  2. In a large mixing bowl, toss the turnips with the rest of the ingredients until evenly distributed
  3. Line a baking sheet with the parsnips and cook for 30 minutes, flipping halfway through
