Zucchini Noodles in a Onion Cream Sauce


  • 1/2 zucchini, spiralized
  • handful of mixed greens
  • 4 sundried tomatoes, chopped into quarters
  • 1 onion, peeled
  • 1/2 cup coconut milk
  • 1/4 cup water
  • 1 tsp garlic, minced
  • salt and pepper to taste


  1. Heat a large skillet to medium heat
  2. Add the spiralized zucchini and cook until heated through
  3. In a Nutribullet cup, or blender, add the onion, coconut milk, water, and garlic. Blend until creamy
  4. Add the onion sauce to the skillet and heat until it starts to boil, stirring occasionally
  5. When little bubbles appear reduce heat a bit and add the sundried tomatoes and mixed greens
  6. Cook until the tomatoes are tender and the greens have wilted.
  7. Remove from heat and serve
