Probiotic Salad

Ingredients

  • 2 artichoke hearts, chopped
  • handful of mixed olives, pitted and chopped
  • 1 Tbsp pickled ginger, chopped
  • 1 tsp garlic, minced
  • 1/4 cup sauerkraut
  • 1/4 cucumber, sliced into triangles
  • 2 oz tuna
  • 2 handfuls lettuce, chopped
  • handful dried seaweed, torn into pieces
  • 1 Tbsp Dijon mustard
  • 2 Tbsp olive oil
  • salt and pepper to taste

Directions

  1. Add all ingredients into a large mixing bowl and stir until well combined.
