Smoked Salmon with Curried Zucchini Noodles


  • 1 Tbsp coconut oil
  • 1/2 onion, chopped
  • 1 zucchini
  • 2-4 oz smoked salmon, cubed
  • 1/4 cup full fat coconut milk
  • 2 Tbsp water
  • 1 Tbsp curry powder
  • 1 Tbsp turmeric
  • 2 tsp garlic, minced
  • handful of basil, lightly chopped


  1. In a large skillet, heat coconut oil over medium heat.
  2. Add the onions and cook for 5-10 minutes, until they become translucent
  3. Spiralize the zucchini and add that to the skillet
  4. Cook for about 10 minutes, stirring occasionally
  5. Add the smoked salmon
  6. In a small bowl mix together the rest of the ingredients
  7. Pour into the skillet, and cook until the sauce is heated
