Tomato Basil Nori Burrito

Ingredients

  • 1 red onion, chopped into 1″ chunks
  • 1 Tbsp coconut oil
  • 3 egg yolks
  • 2 Tbsp full fat coconut milk
  • 4 Tbsp bone broth
  • 1 Tbsp tomato paste
  • handful of fresh basil
  • handful spinach
  • 2 nori sheets
  • 1/2 avocado, sliced
  • handful sprouts

Directions

  1. Preheat oven to 380 F
  2. In a mixing bowl mix together red onion slices with the coconut oil
  3. Spread onions on a baking sheet and bake for 20 minutes
  4. In a small bowl combine the egg yolks with the coconut milk, bone broth and tomato paste
  5. Heat a large skillet over medium heat, greasing it with some cooking fat
  6. Pour the egg mixture in the skillet and let it start to bubble
  7. Mix it around until it becomes scrambled and no more liquid remains
  8. Add the basil and spinach, cooking until it wilts, stirring occasionally
  9. When the onions are done add them to the skillet, mixing together
  10. Remove from heat
  11. Place the nori sheets side by side on a cutting board with the smaller side facing you
  12. Using half the avocado, put them in a row along the bottom of the sheet (closest to you) leaving an inch or two or space from all sides
  13. Top with half the sprouts
  14. Top with the egg mixture
  15. Repeat these assembly steps for the other sheet
  16. Roll like a burrito and let sit for a few seconds so the nori sheet can stick together
  17. Cut in half, or in smaller bits like sushi if you prefer
