Balsamic Veggie Scramble

Ingredients

  • 1/2 head cauliflower, chopped into florets
  • 2 Tbsp coconut oil
  • 1 red onion, chopped into 1″ pieces
  • 1 Tbsp balsamic vinegar
  • 4 egg yolks (mixed with a little water to liquify)
  • handful of spinach (or greens of choice), chopped into strips
  • handful of sprouts (optional)
  • 1/4 cup sauerkraut
  • sea salt and pepper to taste

Directions

  1. Preheat oven to 385 F
  2. In a mixing bowl, combine the cauliflower and 1 Tbsp coconut oil until evenly distributed
  3. Pour mixture on half of the baking sheet
  4. In the same bowl add the red onion pieces and the balsamic vinegar
  5. Mix thoroughly and pour mixture on the other half the the baking sheet
  6. Bake for 20 minutes
  7. In a skillet, melt the coconut oil over medium heat
  8. Add the egg yolks and scramble them
  9. When cooked through, add the spinach
  10. Cook until heated then remove from heat
  11. When the cauliflower and onions are done, add them to the skillet and mix ingredients together
  12. Add to a bowl, and top with sprouts and sauerkraut and season with sea salt and pepper to taste
