Curried Cauliflower Rice Bowl


  • 2 Tbsp coconut oil
  • 1/2 onion, chopped into 1″ pieces
  • 2 cloves garlic, minced
  • 1 cup full fat coconut milk
  • 1/4 cup water or broth
  • 1 Tbsp liquid aminos
  • 1 Tbsp curry powder
  • 1 tsp turmeric powder
  • dash of sea salt
  • 1/2 head cauliflower, chopped into florets
  • 2 cups broccoli florets


  1. Melt the coconut oil in a skillet over medium heat
  2. Add the onions and garlic and saute until tender, about 5 minutes
  3. Add in the coconut milk, water/broth, liquid aminos, curry powder, turmeric powder and salt and whisk well to combine.
  4. Bring skillet to a simmer while you make the rice
  5. In a Nutribullet cup or food processor, add the florets of cauliflower
  6. Pulse until it takes on a rice consistency. Working in small batches seems to make it easier.
  7. Add the cauliflower rice and broccoli to the skillet and cover for 10 minutes, stirring every now and then
  8. Remove from heat and serve
