Cream of Zucchini Soup

Ingredients

  • 2 Tbsp coconut oil
  • 2 onions, quartered
  • 5 zucchinis, chopped into large chunks
  • sea salt and pepper
  • 4 cups vegetable broth
  • 1/4 cup coconut milk

Directions

  1. In a large skillet, melt the coconut oil over medium heat
  2. When hot add the onions and cook for 10 minutes or until they start to golden
  3. Add the zucchini and seasonings and cook for 10 minutes
  4. Add the broth, increase the heat to bring the mixture to a boil
  5. When boiling reduce heat and cover for 15 minutes
  6. Remove from heat and add the coconut milk
  7. Transfer to a blender or pour into a Nutribullet cup in batches, blending until smooth
  8. Serve hot, or store in fridge for later
