A Little Bit of Everything Breakfast Scramble

Ingredients

  • 4 small potatoes, cut into thin medallions
  • paprika, salt pepper
  • 3 Tbsp coconut oil
  • 1/4 onion
  • 2 egg yolks
  • 2 handfuls mixed greens (or green of choice)
  • 1/2 can salmon
  • 2 Tbsp coconut aminos
  • 1/4 avocado, sliced
  • 3 spoonfuls salsa
  • 2 spoonfuls of sauerkraut

Directions

  1. Preheat oven to 400 degrees
  2. In a small bowl, mix together potatoes seasoning and 2 Tbsp of coconut oil
  3. Spread mixture out on a baking sheet and cook for 20 minutes
  4. In a skillet, heat the rest of the coconut oil over medium heat
  5. When warm add onions and cook for 10 minutes, or until golden
  6. Add the egg yolks and mix around until scrambled
  7. Add the mixed green and salmon
  8. When the green are wilted add the coconut aminos and remove from heat
  9. When potatoes are done, remove from oven and transfer the medallions to a bowl
  10. Put the skillet mixture on top
  11. Add the avocado, salsa, and kraut to the top and serve
