Salmon and Kraut Filled Nori Wraps


  • 1 Tbsp coconut oil
  • 1/2 onion, sliced into 1 inch strands
  • 2 nori sheets
  • 1/2 can salmon, or 1/2 cup salmon if fresh
  • 2 Tbsp sauerkraut
  • 2 thin slices of cucumber


  1. Heat coconut oil in a small skillet over medium heat
  2. When heated, add the onions and let cook for about 10 minutes or until golden brown
  3. On a small cutting board, lay out the nori sheets
  4. Divide the salmon in half and spread out evenly down the smaller side about 3 inches away from the left edge
  5. Divide the sauerkraut evenly and spread on top of the salmon
  6. Place one slice of cucumber on top of the salmon and kraut
  7. When the onions are done, take them off the heat and add divide them between the two sheets as well placing them on the top
  8. Roll the sheets like you would a burrito
  9. Slice into 4 pieces for each roll and serve
