Tomato Soup

Ingredients

  • 1/2 of a small onion, peeled and trimmed of the ends
  • 1 large celery stalk (leaves still attached, preferably)
  • 1 medium to large size carrot, scrubbed and trimmed of the ends, broken in half
  • 1 garlic clove, peeled
  • 1/2 cup baby bella mushrooms
  • 2 small/medium tomatoes
  • 1 teaspoon Italian seasonings
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon chili powder
  • 1/2 cup vegetable broth

Directions

  1. Add all ingredients to blender. Puree until smooth.
  2. Add mixture to a pot, heat on medium heat until soup starts to boil.
  3. Serve warm.
