Roasted Vegetables


  • Cauliflower
  • Broccoli
  • Brussel Sprouts
  • Mushrooms
  • Eggplant
  • Zucchini
  • ½ cup Olive Oil
  • Dash of Pepper
  • Dash of Italian Seasoning
  • Dash of Chili Powder (optional)


  1. Preheat oven to 400 degrees F
  2. Cut up all the vegetables into bite sized pieces.
  3. Put them into a bowl, give a little room at the top for mixing.
  4. Drizzle the veggies with oil and add the seasonings
  5. Stir the ingredients together, making sure to evenly distribute the oil and seasonings.
  6. Put in the oven for 20 minutes, checking on it after 15, depending on how you like your veggies cooked this might be enough time.

      So funny you should say that! Somehow the conversation always gets on the topic of a fickle digestive system in our house. I find they can be quite temperamental at times. Thank you for the support, it is much appreciated!
