Pomegranate Ginger Vinaigrette

Ingredients

  • 1/3 pomegranate juice
  • ¼ cup raw apple cider vinegar
  • ½ teaspoon freshly grated ginger
  • 1 garlic clove, grated
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1/3 cup olive oil

Directions

  1. Combine all ingredients omitting the olive oil in a large bowl and whisk together.
  2. Gradually pour in the olive oil while continuing to whisk.
  3. Store in the fridge for up to a week. You will need to shake before pouring as the oil tends to separate from the juice after sitting.
